  • 2 tbsp taco seasoning (GF if needed)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4–1/2 tsp chili powder (to taste)
  • 15 oz can kidney beans, rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 10 oz can diced tomatoes with green chiles
  • 14.5 oz can diced tomatoes
  • 8 oz can tomato sauce
  • 1–1.5 cups corn (frozen or canned, drained)
  • 3 cups low-sodium chicken or vegetable broth
  • 1 tbsp apple cider vinegar or 1–2 tbsp lime juice
  • Salt and pepper, to taste

Equipment

  • 5–6 quart slow cooker Used on HIGH setting
  • nonstick skillet For browning meat and aromatics
  • silicone spatula To scrape all contents into the cooker
  • cutting board and knife For dicing vegetables
  • measuring cups and spoons

Method

  1. In a skillet with olive oil, cook onion for 3 minutes, then add garlic and cook for 30 seconds.
  2. Add ground turkey to the skillet, season lightly with salt, and cook until no longer pink, about 4–5 minutes.
  3. Stir in taco seasoning, cumin, paprika, oregano, and chili powder; cook 30–60 seconds to bloom spices.
  4. Transfer spiced meat to slow cooker. Add both beans, diced tomatoes, tomato sauce, corn, and broth. Stir to combine.
  5. Cover and cook on HIGH for 3.5 hours until the broth thickens slightly and flavors meld.
  6. Stir in vinegar or lime juice. Taste and adjust seasoning with salt, pepper, or extra chili powder as needed.
  7. Ladle into bowls and top with desired garnishes like avocado, cilantro, scallions, cheese, tortilla chips, or yogurt.
