Ingredients

  • 16 oz cream cheese, room temperature (2 bricks)
  • 4 cups shredded cooked chicken (rotisserie recommended)
  • 1 cup shredded Mexican blend or mozzarella cheese
  • 12 oz buffalo-style hot sauce (1 bottle)
  • 1 cup ranch dressing
  • chopped scallions (optional)
  • extra buffalo wing sauce for drizzle (optional)
  • dippers: tortilla chips, celery sticks, carrot sticks, or warm pita wedges

Equipment

  • large mixing bowl
  • spatula or spoon
  • 2-quart baking dish oval or round
  • oven
  • optional: hand mixer for smoother cream cheese base

Method

  1. Preheat oven to 350°F. Moderate heat ensures even melt and prevents greasy separation.
  2. In a large bowl, mix cream cheese, chicken, shredded cheese, buffalo sauce, and ranch until fully combined.
  3. Taste the mixture and adjust heat or creaminess by adding more buffalo sauce or ranch dressing.
  4. Transfer dip into a greased 2-quart baking dish and smooth the top for even browning.
  5. Bake for 20–30 minutes, checking at 20. Look for bubbling edges and golden top spots.
  6. Let rest for 3–5 minutes to set slightly before serving.
  7. Top with scallions and drizzle extra buffalo sauce if desired. Serve with your favorite dippers.
